RegulationsRegulations regarding food trucks can vary widely depending on location. They must follow many codes and regulations similar to restaurants due to food safety laws (“How to Start a Food Retail Business”). They should also know all local health regulations. The lack of regulation, however, is linked to the growth of the sector (Odendahl 2012). Auto sales laws also play a big role: when and where can your truck travel? Your location influences this a lot. Liz Leslie (2013) used Indianapolis as an example of how regulations influence the food truck industry: “Two years ago, a city ordinance threatened the booming food truck industry by banning vendors from sell food between 10:00 p.m. and 6:00 a.m. Since the initial hubbub, Indianapolis Mayor Greg Ballard has largely sided with food trucks.
